2 cups cooked white rice
1 Tbsp oil
1 Tbsp butter
1 lb boneless, skinless chicken
3/4 lb andoiulle, diced
1 small onion, minced
1 green bell pepper, chopped
1 bay leaf
2 - 3 Tbsp flour
One 14-oz can diced tomatoes
One 14-oz can chicken broth
1 tsp cumin
1 tsp Worcestershire sauce
1 Tbsp garlic powder
1/2 Tbsp black pepper
1/2 Tbsp onion powder
1/2 Tbsp oregano
1/2 Tbsp thyme
Salt

Steps:

  • Place a large, deep skillet over medium high heat. Add oil and butter to the pan. Cube the chicken and place it in hot oil and butter Brown for 3 minutes, then add the sausage and cook 2 minutes ore. Add pinion and seasonings. Add the vegetables and sauté for 5 minutes. Sprinkle flour over the pan and cook for 1 or 2 minutes more. Stir in tomatoes and broth and add Worcestershire sauce. Bring liquids to a boil. Simmer for a short while to let flavors meld. Serve over the rice.

  • Add the remaining 2 tablespoons oil to the stock pot. Add bell peppers, celery, jalapeño, onion and garlic. Sauté for 6 minutes, stirring occasionally, until the onions are softened.
  • Add the crushed tomatoes, chicken stock, rice, Cajun seasoning, thyme, cayenne, bay leaf, and stir to combine. Continue cooking until the mixture reaches a simmer. Then reduce heat to medium-low, cover and simmer for about 25-30 minutes, or until the rice is nearly cooked through, stirring every 5 minutes or so along the way so that the rice does not burn.
  • Add the shrimp, okra, and stir to combine. Continue to simmer, stirring occasionally, until the shrimp are cooked through and pink. Stir in the chicken and sausage, and remove and discard the bay leaf.

  • Heat oven to 200C/180C fan/ gas 6. Heat the oil in a heavy-based flameproof casserole dish on a medium-high heat. Season the chicken thighs, add to the dish and cook for 4 mins until they start to brown, stirring occasionally so they don’t stick. Add the chorizo and cook for a further 4 mins until it releases its oils and has started to crisp. Remove the meat with a slotted spoon and set aside on a plate.
