GRILL SEASONING

lately i've seen a lot of recipes that call for grill seasoning. besides the cost (nearly $5 for a bottle), it's chock full of msg and other nasties. taking a tip from rachael ray, i've made my own and use it for anything i'm grilling or want to give a grilled taste to. update: monstr pointed out there's no msg in mccormick's grill seasoning. there is, however, hydrogenated oil in it, and msg can be found in other brands. so read your labels, and if msg, hydrogenaged oils or the price tag bother you, mixing your own is the way to go.

Time: 5 minutes

Steps:

  • mix all ingredients together well and store in an airtight container', "use it for anything you're grilling or when you're looking for a grilled taste", 'this is the one i hear called for most often
  • experiment !

  • using tablespoons , this makes enough for 7 or 8 meals under normal usage

GRILLED SEA BASS

This is a truly flavorful dish with a lovely plate presentation. My mom and I experimented and made this for lunch. It came out so good I promptly went to the fish market so I could make it for my dinner guests that night. YUMMY!

Steps:

  • Preheat grill for high heat.
  • In a small bowl, stir together the garlic powder, onion powder, paprika, lemon pepper, and sea salt. Sprinkle seasonings onto the fish.
  • In a small saucepan over medium heat, melt the butter with the garlic and parsley. Remove from heat when the butter has melted, and set aside.
  • Lightly oil grill grate. Grill fish for 7 minutes, then turn and drizzle with butter. Continue cooking for 7 minutes, or until easily flaked with a fork. Drizzle with olive oil before serving.
