HEALTHY THICK CHEWY GRANOLA BARS FOOD

Healthy Thick Chewy Granola Bars image

This was adapted from King Arthur Flour, however I tried to use healthier ingredients. I love this recipe as it is extreamly easy and flexible. This is a basic granola bar that you can add anything to. I try to make this weekly as a quick on the go breakfest or a healthy snack during the day. I've double the recipe and keep extras in the freezer.

  • Line an 8 x 8-inch square pan with foil or parchment, letting it hang over the edges on two opposite sides. Lightly spray the foil with cooking spray. Preheat oven to 350 degrees F.
  • In a medium bowl, whisk together the melted butter, nut butter, applesauce, honey, and vanilla until well combined. Add the wet mixture to the bowl with the oat mixture and stir until well mixed. Stir in the dried fruit, nuts, chocolate, etc.
  • Scoop the mixture into the prepared pan and use your hand to press it down into an even layer. Bake for 25-35 minutes, until the edges begin to brown. Place the pan on a wire rack and cool completely. Refrigerate the bars in the pan for at least 30 minutes before cutting into bars. The bars will maintain their chewy texture best if stored in the refrigerator. The granola bars freeze well, too, wrapped airtight.

2019-10-03  · Condensed is just milk boiled down with sugar until thick. So you’re adding sweetness, yes, but also adding concentrated milk, which means calcium and protein. The can offers 30 grams of protein to your recipe that honey wouldn’t provide. It also layers the bars with a complex milky, toasty flavour that I love. Add a bit of fat. I use a scant 4 tablespoons of butter for 18 bars…

  • Preheat oven to 350ºF. Spread oats in a 9x13" metal baking dish and toast for 20 minutes, stirring every 5 minutes.
  • While oats are toasting, melt butter in the microwave for 30 seconds on high power. Let cool to room temperature.
  • When oats are deeply golden brown and nutty smelling, spread them out over a cold baking sheet to cool them quickly. Run the hot baking dish under cold water to cool it down, too, then line it with parchment paper.
  • In a large bowl, combine cooled oats salt to combine, then stir in condensed milk, cooled butter, seeds, dried fruit and chocolate chips. Dump the mixture into the parchment-lined baking dish then press it down into an even layer (lightly moisten your hands to make it easier). Bake for 15 minutes until edges are a shade darker. They will firm up as they cool. If overbaked, they become crunchier granola bars, which are still tasty.

  • In a large pot, bring the butter, honey, coconut sugar and molasses on high heat. Once boiling, boil until it just begins to thicken - about 45 seconds to a minute.
  • Remove from the heat and whisk in the vanilla until well mixed. Finally, stir in all the remaining ingredients except the chocolate chips until everything is coated.
  • Press the mixture VERY FIRMLY into the prepared pan (I find using SLIGHTLY damp hands works super well) and then sprinkle with the chips, lightly packing them in.
