Sesame Yam Sticks


easy, tasty, quick. enjoy.

Time: 30 minutes


  • boil or bake yams until soft but not mushy
  • let cool or refrigerate overnight
  • peel and cut yams into pieces about 2 x 1 / 2 x 1 / 2
  • roll yam sticks in sesame seeds , pressing to make seeds stick
  • saut in oil for one minute on each side , drain and cool
  • serve cool or broil briefly to crisp sticks and serve hot

  • Cream the butter. Add the flour, and salt. Mix until butter is completely blended into the flour mixture.
  • Blend in the egg, parmesan cheese and sesame oil. Mix until it looks like cookie dough.
  • Press out on parchment paper in a 10 X 15 inch sheet pan until 1/4 inch thick and press in the sesame seeds. (Try to have a rectangle and equal thickness.).
  • Use a pizza cutter, and cut into 1/2 X 1/2 inch pieces and spread out on the parchment paper so they are not touching.
  • Bake at 400 degrees for 15-20 minute until golden.

  • 3/4 cup flour
  • 1/8 teaspoon salt
  • 1/2 egg, beaten
  • 1 -2 teaspoon sesame oil
  • 2 tablespoons parmesan cheese, shredded

  • 1. Coarsely powder the oats in a blender and add the rest of the dry ingredients, including sesame seeds. Mix well. 2. Melt the butter and mix into the dry ingredients to form a bread crumb like consistency. 3. Add water a little at at time and knead to stiff dough. Let sit for 30 minutes. 4. Divide the dough and form into 2 balls. 5. Place one ball on a Silpat placed on a baking sheet, cover with plastic wrap and roll to 1/8" thick. Reshape rough edges so all sides are smooth. 5. Using a plastic cutter cut dough into small strips. Repeat this process with the remaining dough as well. 6.Bake for about 10 minutes until they are light brown. Turn them over and bake for another 10 minutes. Allow to cool before snacking!

  • In the bowl of a food processor, pulse flour, baking powder, and salt until combined. Add butter; pulse until mixture resembles coarse meal. Transfer to a medium bowl; stir in buttermilk and 1 cup sesame seeds until mixture forms a dough. Divide into quarters; wrap in plastic. Chill 20 minutes.
  • Preheat oven to 350 degrees. In a small bowl, whisk together egg, sugar, and soy sauce. Transfer one piece of dough to a lightly floured work surface; roll out into a rectangle about 1/8 inch thick. Use a sharp knife or pizza wheel to cut into strips, about 3/8 inch wide and 10 inches long. Brush strips with egg mixture; sprinkle with remaining 1/4 cup sesame seeds.
  • Arrange strips on a parchment-lined baking sheet. Bake until just golden, 15 to 20 minutes. Transfer to a wire rack to cool. Repeat with remaining dough.

  • Stir together baking mix and cream; blend for 30 seconds. Turn dough out onto a lightly flour surface and knead 10 times. Roll dough into a 5x10 inch rectangle. Cut dough into 1/2 inch wide strips.
