Here I go again...another sriracha hot chile sauce recipe. I can't help myself; I'm sooooooooo hooked. Overlap cooking the eggs with the prepping of the remaining ingredients and they're done in no time. Oh, this really puts the devil in deviled eggs.

6 hard-boiled eggs
3 tablespoons mayonnaise
1 tablespoon Dijon mustard
2 teaspoons sriracha hot chili sauce
1 tablespoon minced onion
1/2 teaspoon garlic powder
1 tablespoon sweet pickle, minced (optional)
salt and pepper
chopped green onion (to garnish, can sub parsely)

Steps:

  • Peel eggs and cut in-half lengthwise.
  • Scoop yolks into a bowl and mash with a fork. Add mayonnaise, mustard, sriracha, minced onion, garlic powder and sweet pickle. Stir to combine. Season to taste with salt and pepper.
  • Use a spoon or piping bag to fill each half of an egg with mixture. Squirt a dab of sriracha sauce on top of each egg, sprinkle with green onion and serve.

  • Place the eggs in a large pot and add enough cold water to cover by 1 inch along with the vinegar. Bring to a boil and then immediately reduce the heat and gently simmer for 10 minutes.
  • Remove the pot from the heat, place it in the sink, and run cold water over the eggs for 1 to 2 minutes to cool them down a little. Transfer the eggs to a bowl filled halfway with ice water and forget about them for about 20 minutes.
  • Peel the eggs (see above *NOTE How To Peel Hard-Cooked Eggs) and then slice each egg in half lengthwise. Using a regular old spoon, scoop out the yolks and dump them in a medium bowl.
  • To the egg yolks in the bowl, add the mayonnaise, mustard, Sriracha, bacon drippings, salt, and pepper and whisk until smooth. Take a taste and adjust any ingredient as desired.

  • Place the eggs in a medium saucepan and fill the pan with enough water so that it covers the eggs by about an inch. Bring to a boil over high heat, then remove the pan from the heat, cover, and let stand for 10 minutes. Place the hard-boiled eggs in a bowl of cold water to cool (I usually just use the saucepan).
  • Slice the eggs in half lengthwise, remove the yolks, and place them in the bowl of a mini food processor. Arrange the whites on a serving platter, gently wiping them clean if necessary. To the yolks, add the mayonnaise, 1 tablespoon of the sriracha, the mustard, the Worcestershire sauce, the salt, the black pepper, and the sugar. Process until smooth. (If you don't have a mini food processor, pass the yolks through a sieve before combining them with the other ingredients. This will make them easier to blend without getting lumps.) Taste and adjust the seasoning, adding more Sriracha if necessary.
  • Fill a piping bag fitted with an open-star or large plain tip with the yolk mixture. (Alternatively, fill a sealable plastic bag with the yolk mixture, and use your hand to push the mixture to one corner of the bag. Use scissors to snip off the tip of the corner, opening up a 1/4–in [6-mm] hole.) Pipe the yolk mixture evenly into the egg white halves. (Or, for a less fussy preparation, simply spoon the yolk mixture into the egg whites.) Sprinkle with paprika and chives, and serve.
