Sundried Tomato and Olive Polenta - Ancient Renaissance Recipe image

Great simple Italian recipe; takes no time to whip up, and is guaranteed to please everybody in your family. It's a nice recipe that was passed down from generation to generation; It's a cheap peasant meal that was found in the original untranslated transcript of an old Petrarch poem. Try making it once, and you will see why this recipe has stood the test of time.

1 cup instant polenta
4 cups vegetable broth
1 cup crumbled feta
2/3 cup freshly shredded parmesan cheese
2/3 cup chopped sun-dried tomato
1/3 cup sliced kalamata olive
1/2 cup sliced fresh basil
1/4 cup olive oil
1/2 cup flour

Steps:

  • boil the vegetable broth; once boiling, stir in the polenta - let it simmer on low heat while stirring frequently for 15 minutes.
  • Remove from the heating element; stir in the crumbled feta, shredded parmesan, chopped sundried tomatoes, chopped up basil, and sliced olives.
  • once stirred in evenly, put the mixture in a GREASED cake pan (or any circular or square shaped container of similar diameter) and spread/press down evenly.
  • let the mixture firm up in the refrigerator for a minimum of 2 hours.
  • once firm, cut the firm polenta mixtures into slices (approximately 16); coat in flour, shaking off excess.
  • fry the floured polenta in olive oil until nicely browned; then drain on paper towel.

  • Line a 10x15x1/2 baking tray with aluminum foil leaving a 2 inch overhang at each end, oil generously with olive oil or spray with non-stick.
  • Combine 2-1/2 cups water, salt and the garlic to a 3-quart saucepan and, over medium-high heat bring to a boil. In a small dish, mix the remaining 1 cup of water with the cornmeal and add to the boiling water, stirring constantly. Reduce the heat to low and cook for 5 minutes or until thickened.
  • Transfer the polenta to the food processor and process to a smooth consistency, about 30 to 45 seconds. Do not over fill the processor, it may be necessary to process in batches. Transfer the polenta to a mixing bowl and stir in the lemon juice and the chopped basil.
  • Pour the polenta into the prepared pan, pushing it into the corners and smoothing the top. Brush the top with olive oil and place in the oven under the broiler. Broil just until the top is slightly toasted, remove and allow to cool before transferring to the refrigerator to cool completely.
